During the week, there’s not a great deal of time to cook up something amazing for breakfast and so we tend to grab something easy and not necessarily healthy. Some of us even skip the most important meal of all and are left feeling tired and not switched-on to tackle the day.

This recipe devised by the lovely Fearne Cotton is the ultimate breakfast for those who need something, yummy, full of nutritional benefits and is quick to make.

The 5 minute breakfast wrap can be enjoyed on your way to work or dashing around the house. You’ll be getting protein, veggies and healthy carbs in one meal too.

Ingredients: Serves 2

  • 2 tsp coconut or olive oil

  • 4 eggs beaten

  • 100g of washed spinach leaves

  • 2 spelt or wholegrain tortillas 

  • 1 ripe avocado, halved, stone removed and flesh sliced

  • Handful of crushed walnuts 

  • 100 g of red peppers cut into strips

  • Red chilli halved lengthways, deseeded

  • A few flat leaf parsley leaves if required

Method:

Put the oil in a frying pan over a low-medium heat. Add the eggs and spinach and cook gently, stirring for 4-5 mins. Season with salt and pepper and remove from the heat.

In another dry frying pan, gently warm the tortillas for about 30seconds or until softened.

Divide the egg and spinach mixture between the two tortillas and top with avocado, walnuts and parsley or chilli. Fold over to enclose the filling and either eat straight away or pop in some foil to eat on the go.
